Lean Green Eggs and Ham Cups

This recipe is a sure crowd pleaser at any brunch, and also the perfect quick, healthy protein-packed breakfast. This brunchworthy recipe requires few ingredients, and takes minimal time to make!


The yolk of an egg has a ton of beautifying nutrients in them!

Eating the yolk of an egg provides many nutrients such as- folate, omega 3's, and are rich source of vitamin B12. They are also fantastic for glowing skin since they are full of amino acids that aid in the generation of new skin cells.

I used to just like eggs scrambled, but now I appreciate eating them in a variety of different ways. Comment below and let me how you like your eggs! For this recipe I cooked them long enough where the yolk was a little runny, but jammy- the egg yolk sweet spot in my opinion!

Preparation Tip:

Make these while you do your hair and make up. They are easy to assemble and just pop in the oven. Set a timer, get ready and then you will have a delicious, healthy breakfast waiting for you!

Lean Green Eggs and Ham Cups

1 Serving


Ingredients:

  • 2 large brown eggs

  • 2 slices of deli meat ham

  • small handful of spinach

  • 2 tbsp shredded cheese of choice

  • salt and pepper to taste

To Make:


  • Preheat oven to 400

  • Spray 2 cups of the muffin tin

  • First place the slice of ham in each up

  • Then add the cheese

  • Then sprinkle in the shredded cheese (1 tbsp per egg cup)

  • Sprinkle in some spinach (great way to sneak in greens!)

  • Crack and egg into each muffin tin

  • Sprinkle some salt and pepper on top of each

  • Bake for 12-14 minutes (the longer side of cooking will give you less of a runny yolk)
