The first time I tried spaghetti squash, my mind was literally blown! A vegetable that turns into spaghetti-like noodles- ahhmazing. I find that I use spaghetti squash as a noodle swap more often during the Fall and Winter. So, I figured this would be the perfect time to share a super delicious, seasonal recipe highlighting this healthy pasta swap!
Let's check in first- I had Covid earlier this month, and feel like this weekend I finally felt 100% back to normal energy levels-wise. I've been extremely busy with my 9-5, and honestly that was all I could focus on, along with getting myself healthy again the last 2 weeks. Luckily I had a mild case, but it took a minute for my energy to get back to where I'm used to having it- and this weekend. I had a moment where I had to stop myself and be like "ahh there she is- she's back!". So long story short, I still hope to make it to Trader Joe's and also do a Farmers market post, as those were top on my list for Fall blog posts! Trader Joe's isn't super close by to me, so although it's not hours away, I don't make it out there super often..which is all the more reason why I feel I am overdue to go get my fix haha
Ok, onto the spaghetti squash recipe in 3, 2 ,1!....
Cozy Season Spaghetti Squash Pasta
(2 Servings)
Ingredients:
2 Apple Chicken Sausage links
2 handfuls spinach
1 medium spaghetti squash
1/2 cup Good & Gather (Target Brand) Butternut Squash Pasta Sauce
1 tsp olive oil
2-3 tbsp unsweetened nut milk
1/4 tsp each onion and garlic powder
Black Ground pepper to taste
chopped fresh basil
1 tbsp shredded parm or goat cheese crumbles per serving (optional)
Directions:
The quickest way to make spaghetti squash is to microwave it and yes, it still comes out delicious! First, poke holes all around the squash, place in a glass microwave safe dish and microwave for 7 minutes. Carefully remove the squash from the microwave with oven mits or a kitchen towel, and flip the squash halfway over, and microwave for an additional 7-8 minutes.
While the squash is cooking the rest of the way, chop your chicken apple sausage and add to a skillet with 1 tsp olive oil and cooking spray. You can add a little water to help steam and aide the cooking process along- you will want the sausage slightly golden brown- mixing it around in the skillet every few minutes (about 7-8 minutes cooking time). Once done cooking, remove from heat
Once the squash is done, set to the side to cool a bit- i usually cut the squash now length and width-wise to release the steam, before removing the seeds and then scooping out the spaghetti squash for the recipe.
After the squash has cooled a bit you can now flake out the squash to use as your "spaghetti", careful to remove the seeds while you do this.
Add the spaghetti squash to the skillet with your chicken sausage, along with the Butternut Squash Pasta sauce and 1/4 cup almond milk, garlic and onion powder and black pepper- let this combine over medium-low heat for about 3-4 minutes
Then add in spinach and let wilt into pasta - about 3 minutes
Option to top your pasta with fresh basil and 1 tbsp parm or goat cheese crumbles and enjoy!
**Recipes Notes: If you can't find the Butternut Squash Pasta sauce at Target- here is an alternative that would work for the sauce without making your own butternut squash puree--1/2 cup butternut squash bisque, 1 tsp honey, 2 tbsp parm cheese or nutritional yeast + 1-2 tbsp unsweetened nut milk ,1/8 tsp nutmeg, 1/4 tsp garlic and 1/4 tsp sage or poultry seasoning.
