I thought it would be fun to share my journey with you all, so that we can inspire each other along the way, and I have something to look back on too. So what perfect way to share my journey and help each other out, than by doing a weekly blog series this Summer!?
I'll be sharing everything from healthy recipes, workouts, health/beauty tips, fashion tips, dating tips and mindset hacks- anything to do with glowing up :)
But before we get into our Summer Glow Ups, we need to come up with our goals! #goalgetters

Ok so back to the guide! What's fun about this guide is that you can print these planners each week to help keep you accountable and organized-- and mayyybe even make yourself a binder too to keep everything all together. Eeeek! I'm overloaded with excitement lol
So up for this week we're going to travel a bit....to Greece :) I've always wanted to go there. I figured it would be fun to travel a bit through food and culture during our Summer Glow Up Series.
Since 2020 was a year of non-existent travel, let's get our Passports ready and have some fun this Summer of 2021!
Let's get into this week's food prep, shall we?
This breakfast is going to an easy one for you to prep and you can easily change out the fruit to whatever you would like! I'm on a bit of cherry kick as of late, so we're calling this Chia Cherry Bomb Yogurt Parfait.
To make- 1 5-6 oz plain 0% greek yogurt, or any plain unsweetened nut milk yogurt if dairy free. Mix yogurt with 1 tsp vanilla extract, 1 tsp local honey or maple syrup, 1/2 tsp cinnamon, 2 tbsp chia seeds + 1/2 cup sliced cherries or fruit of choice. Store in a mason jar for an easy grab and go breakfast!
Next up...lunch. This quinoa greek pasta salad is quick and easy to make and delicious!
To make- 10 turkey pepperonis (or 1/2 cup chickpeas if vegan), 1 tbsp hemp hearts, 1/4 sliced medium cucumber into quarters, tri color cherry tomatoes, 1 cup cooked quinoa (cooked to package directions) or buy frozen and microwave for timesaving tip!, 2 tbsp feta cheese or cheese of choice, 1 1/2 tbsp red wine vinegar, 2 tsp olive oil, 1/4 tsp each garlic, onion powder and oregano to season. Store in a glass tupperware for an easy portable lunch!
Last stop- dinner! I just came up with the recipe for this Greek inspired soup and it is deeelicious!!
To make- 4 spinach and feta chicken sausages, diced and sauteed in a skillet with cooking spray for about 5-6 minutes. If vegan, add in crumbled, sauteed tempeh.
Next to a large soup pot or crock pot- add in 3 cups unsalted chicken bone broth (OR low sodium veggie stock), 1 can no salt added Rotel (OR add 1 can no salt added diced tomatoes- if you don't like spicy) 3 tbsp tahini, 3 handfuls spinach, 1 can chickpeas washed and drained with shells removed. Add in 1/2 tsp each oregano, basil, garlic and onion powder. Simmer on stove top for about 25-30 minutes, or cook for about 2 hours on low in crockpot. Top with a little feta cheese if you wish!
